Why Are Some Jalepenos Hotter Than Others?

It has to do with two things. The first is the variety of jalepeno, and you can grow a milder variety if you like the taste but not the heat.

The other factor is how the jalepenos are grown. If the plants get stressed, like from lack of water, the capsaicin increases causing them to be hotter.

If you want to take as much of the heat out of a pepper as possible remove the white ribs as well as the seeds. Conversely, leave them in to make the sauce hotter.
