Yes, you can make potato skins in an air fryer! The potato skin is super crispy in the air fryer and makes the perfect little bite with melted cheese, Greek Yogurt, and Scallions.

Why You Will Love This Recipe

Potato skins are a potato that has been fully baked and the insides are scooped out. Not all the insides though. Whatever is left can be used up in a potato salad, soup, or mashed potatoes.

Then the skin gets baked again so it's super crispy with some gooey cheese on top and it is the perfect little finger food appetizer.

Top them with some sour cream, green onions, or freshly cracked black pepper. The air fryer makes super awesome crispy potato skin!

Ingredients Needed

Potatoes - Any medium-sized potato, my favorite is Yukon Gold. Love their golden color and the buttery soft insides. In the recipe builder, there are uncooked and cooked potatoes, I entered them in as uncooked to get 3 points.

Cheese - Not much cheese is needed for the top.

Cheddar (mild, medium or sharp), Colby Jack, or Mexican cheese blend work well for potato skins.

Green Onions and scallions are actually the same vegetables! They are one of my favorite kinds of onions that are great for a garnish on top of potato skins. If you don’t like green onions use fresh parsley. (0 Points)

Sour Cream - Instead of sour cream use non-fat plain Greek Yogurt. I swear it tastes just like sour cream and you won't even notice! Greek yogurt is zero points on WW blue and purple plans.

How to make Air Fryer Potato Skins

Preheat air fryer to 400 degrees. Spray potatoes with cooking spray and season with salt and pepper.

Set the potatoes in the air fryer basket and cook for 30 to 40 minutes. The potatoes are ready when a fork or knife can be easily inserted into them and taken out.

Take the potatoes out of the oven and let them cool for 5 to 10 minutes. Cut the potatoes in half. Scoop out the insides so that there's just enough potato around the skin.

Spray the potatoes again with cooking spray or butter spray to give them more flavor. Lay them on their flat side back in the air fryer basket and bake again for an additional 5 minutes.

Open the basket up and sprinkle cheese on top of the potato skins. Continue cooking for 3 minutes or until the cheese has melted.

Take the potatoes out of the air fryer using some tongs and garnish them with sour cream, green onions, and black pepper.

Potato Skin Toppings

Cheese, sour cream, and scallions are the classic toppings for potato skins, but here are some other fun toppings to go on top of the potato skins.

  • Make the Best Damn Guacamole Ever to add on top of the potatoes.
  • Before making the potato skins in the air fryer make some of my crispy AIr Fryer Bacon to sprinkle on top.
  • Paula Deen's Crock Pot Mac and Cheese to drizzle all over the (yes, I need to try this!)
  • Caramelized onions
  • Black beans and corn (for a Southwest spin).

Best Tips for Air Fryers

The air fryer is so great for cooking simple basic food like air fryer steak, air fryer hard-boiled eggs, and air fryer bacon. Cook up some air fryer chicken breasts for the week and use it chicken quesadillas.

Overcrowding:Do not overcrowd the basket. Place items in a single layer in the air fryer basket or some food will not cook properly or all the way through.

Use a spray oil such as Pam to get food extra crispy and to save on calories.

Use parchment paper on the bottom of your air fryer for easy clean up.
