Oatmeal cookies are a classic cookie. They are usually filled with raisin, but this recipe adds another texture with diced fresh apples. These fresh apple oatmeal cookies are perfect for breakfast or even when you just need a pick me up. Sweet and delicious, they are definitely a favorite in my house!

Can these be oatmeal breakfast cookies?

When it comes to an easy breakfast idea, these oatmeal breakfast cookies are perfect. Grab a cookie and pair it with fresh fruit, yogurt or a protein shake. These are also great to eat on the run. It is an easy breakfast even when there is no time for breakfast. Keep these oatmeal breakfast cookies on hand for a simple breakfast no one will complain about.

Can I freeze cookie dough for later?

Whenever I make a batch of cookies, I like to make a double batch. One to make now and another batch to keep in the freezer. When freezing cookie dough, there are two ways to freeze it.

You can freeze the cookie dough as a batch or you can scoop the cookie dough into balls before freezing the cookie dough. This is like when you buy the ready to bake cookie dough at the store. However, when you make the cookie dough yourself, and it will taste so much better.

Scoop the cookie dough as normal and then freeze it on cookie sheets. Once the dough balls are frozen, move the cookie dough balls to a freezer bag or airtight container.

How to Store these Cookies

When you bake these cookies, you can store them at room temperature. It is important that the cookies are covered so that they are not getting stale. Store the cookies in either an airtight container or freezer bag. The cookies will last up to 7 days.

If you do not think that you will finish the cookies before they go bad, consider freezing the cookies. Just like freezing the cookie dough, freeze the cookies in a single layer on a baking sheet. Once frozen, move the cookies to a freezer bag.

This lets you be able to take the cookies out a few at a time, instead of them sticking together and needing to eat all the cookies before they go bad.

How to Soften Hard Cookies

If you find that the cookies have started to get hard, you can easily soften them. You can soften the cookies by putting them in a damp napkin and microwaving them for about 10 seconds. This will vary depending on how powerful the microwave is. Be sure not to overheat the cookies because this can cause it to become even harder.

How to make this apple cookie recipe

Prepare your apples and set to the side on a paper-towel covered plate.

Allow the excess moisture to drain from the apples.

Using a stand mixer attach the paddle attachment.

Now add the butter, brown sugar, and beat until smooth.

Add in the egg, and vanilla, making sure to mix well after each ingredient.

Set to the side.

Sift together the flour and baking soda.

Add the sugar, pie spice, oats to the flour mixture and stir to combine.

Slowly, add the flour mixture to the wet ingredients and mix until just combined.

Add the chopped apple to the cookie mix and stir until fully combined.

Cover and refrigerate the dough for 1 hour.

Preheat oven to 350 degrees.

Line baking sheets with parchment paper.

Once ready to bake using a small ice cream scoop, scoop the dough onto the prepared baking sheets.

Baked for 12-14 minutes.

Remove from the oven and allow to cool.
